- This 8" Gyuto (Chef's Knife) utilizes a double beveled blade crafted from 9CR18MOV carbon steel. With a Rockwell hardness of 60, this blade will serve as a workhorse by keeping its edge longer and sharper.
- Each Knife uses a traditional Japanese octagonal shaped Tortoise Shell Resin Handle. This handle is water proof and will not crack or expand over time.
- Our promise to you! Each knife is individually made by hand and rigorously inspected before earning a red dot seal at the end of the handle.
